What you are about to enjoy
is the meticulous fruit from a small property of less than 1.5 hectares, located in
the commune of Saint-Christophe-des-Bardes, adjacent to the Château Laroque
Grand Cru Classé. This wine is a unique blend of 90% Cabernet Franc and 10%
Merlot, aged on a lens of Glay-type clay over limestone bedrock with asteries. The
vines are cultivated using biodynamic practices and benefit from a plant cover that
helps maintain soil balance and natural temperature regulation. Once handharvested,
the grapes are vinified with indigenous yeasts in parcel-specific tanks.
At the beginning of fermentation, color and fruit extraction is achieved through
numerous pump-overs, transitioning to infusion during the alcoholic phase to
avoid the harshness of less noble tannins. The wine is aged in new fine French oak
barrels from the ancient forests of Tronçay, crafted by Tonnellerie Bordelaise,
which takes place in December and January, imparting an elegant structure to the
wine. Château Blanche Hermine is a rich, complex wine with a delicate touch,
elegant and very balanced with melted, salivating tannins; it is a Saint-Émilion of
great sapidity. It has strong aging potential. The energy that emanates from this
excellent vintage 2016 reflects its sunny character!
